摘要 香菇是一种营养丰富的食用菌,脱水干燥作为香菇的主要加工方式,可以有效延长香菇食用期。本文综述了多种香菇干燥方法,阐述了不同干燥方法的原理、成本、速率以及品质,比较不同技术的优势和不足,并提出香菇干燥产业的发展趋势,以期对香菇干燥产业的发展提供参考。 Lentinus edodes is a nutritious edible mushroom.As the major processing method of lentinus edodes,dewatering and drying can effectively extend the edible period of lentinus edodes.This paper summarizes a variety of drying methods of lentinus edodes,expounds the principle,cost,speed and quality of different drying methods,and compares the advantages and disadvantages of different technologies,and puts forward the development trend of the drying industry of lentinus edodes in a view to providing a reference for the development of the drying industry of lentinus edodes.
